Basics about indian cooking

Learn your C's. Cinnamon, Cardamom and Cloves, think and visualize these spices in your head. Now repeat after me Cinnamon, Cardamom, Cloves - again Cinnamon, Cardamom, Cloves.

Approach cooking with a sense of discipline and caress. You cant give up after trying only once, you have to keep trying, try new things, try different ways. If you follow a recipe a certain way, try to approach the same dish with a twist, see how that would turn out.

You'll notice that while you are cooking, you'll notice momentary lapses of time just waiting, learn to use that time to clean up, throw the onion peels, clean the dust of salt, put your peeler, can opener back in the drawer, give a quick wipe to your surfaces.

Apart from knowing the difference between slicing, chopping and mincing - learn to remember the smell of coriander leaves, mint leaves and curry leaves, learn to use green chillies without fear.
